Ok "Champagne Cocktail Thursday" isn't a real thing but the kids are in bed and its time to unwind. Now, I realize champagne is known as a celebratory drink. Most pop the bottle on special occasions like getting a new job, getting married etc. Not us! My husband and I drink champagne like it's going out of style. I don't see any reason why one can't drink it on an ordinary Thursday night. Besides, if it is know as the "celebration" drink then I have a lot to celebrate-A loving, hard-working husband who just also happens to be an amazing father; a sweet, smart and healthy Baby D; food in my belly and a roof over my head..so why not!
Every now and then I like to bust out the cocktail shaker and make a little champagne cocktail. The French 75 is a classic and just happens to be one of my favorites. The photo above uses a pretty fancy Perrier-Jouet (yum!) but its a school night so I'll settle for some Mumm Napa Blanc De Noirs.
One of the key ingredients is simple syrup. It's best to make the simple syrup ahead of time as it needs time to cool off before mixing into the drink. Here's the recipe:
- 1 cup water
- 1 cup sugar
In a saucepan bring water and sugar to a boil. Then simmer until the sugar is completely dissolved (about 3 minutes). Remove from heat and let cool off completely. You can place the syrup in a bottle and refrigerate for future use.
- 1 bottle of your favorite champagne
- 1/2 cup gin
- 1/2 simple syrup
- 1/2 cup lemon juice
- lemon twist
- 5 ice cubes
Put the 5 ice cubes in a cocktail shaker. Pour the gin, simple syrup and lemon juice in the shaker and SHAKE SHAKE SHAKE. Pour about 1/3 into the champagne flutes. Top with champagne. Then garnish with lemon zests and viola!
